New Recipe: Lasagna Roll Ups
Last night we tried Lasagna Roll Ups; I used this recipe from the Pioneer Woman as a starting point, but altered it a little bit. I specifically used the filling recipe, but used dried spices because that's all I had. I can't say anything in response to the homemade sauce because we can our own so I just used that. We had enough people eating that we didn't freeze any of them, but I LOVE that there is that option: when we are no longer living with my in laws, I will definitely be doing this as a freezer meal. Honestly, I was super intimidated by roll ups because it looked so hard, but it was A LOT easier than I had anticipated. Depending on the size of your family, you could either use the 9x13 pan or mini loaf pans to hold them all. I love that, if I make these ahead of time, I have a SUPER easy meal to pull out and have ready in less than an hour (plus, if they're done ahead, you can be making a salad...or garlic bread...or brownies...whichever.
