New Recipe: 5 Ingredient Crock Pot Beef Stroganoff

My culinary arts teacher from high school would probably cringe at some of the ingredients on this list, but I LOVE how yummy, easy, and quick this recipe is! First of all, the crock pot is an AMAZING invention. end.of.story. I'm a stay at home mom, but I feel like I'm constantly running all over the place for my two oldest and I barely get the laundry done and put away (or not put away...). Before kids, I loved to cook more time-consuming meals, particularly when I wasn't working, and we tried different things occasionally. Then BAM! I had kids and we seemed to have the same 4-6 meals on repeat. It got boring, the hubs and I got sick of it, but it was easy, so we stuck with it. Then we decided to do something about it. I bought some of these awesome peel-and-stick calendars (see bottom of post)and it's made it so much easier (you could also just write it on a plain old calendar or find a plain one on google and do it that way, but I loved that I had one for when bills came out, one as a menu, one to help everyone keep track of what we had going on every month, and I gave one to my mother in law). As a result, I put some of our tried and true recipes (i.e. the recipes I know my kids will eat without too much complaining...) a couple times a month, but mostly there are no repeats throughout the month AND we have 1/3-1/2 of our recipes as new recipes. Anyhow, so last night's recipe was Beef Stroganoff (my in-laws, who we currently live with, butcher one beef cow/year, so at least 50% of what we eat is various cuts of beef). I found this recipe off Num's The Word and it's beyond awesome. We used stew meat, but you could also cube a beef roast or, for a more rustic approach, just cook it whole and shred it throughout the cooking time (note, the cooking time would be longer if you did it that way). The recipe calls for one can cream of onion soup and one can cream of mushroom. However, out of the 8 of us living here, only two like mushrooms, so we just did two cans cream of chicken and it turned out just fine. If you follow the recipe as it is, you'll have dinner that takes 5 minutes to put together and is ready in 3-4 hours: pure bliss! We served ours with home-grown green beans and it was delish! Seriously, go take a look at the recipe and make it ASAP: you won't be sorry!
