Family Favorite: Chicken Fried Steak

Anyone that knows me knows that I thoroughly enjoy watching Food Network, especially Pioneer Woman. As a family, we have tried a few of her recipes and we have NEVER been disappointed with the results. One of our all-time favorites is her Chicken Fried Steak and Gravy served over mashed potatoes. It is seriously so delicious and, while it does take a little bit of time, it isn't difficult and well worth the time spent making it. We served it with green beans we harvested and canned a couple months ago and then used our InstantPot to cook the mashed potatoes (more on that later...). It was the perfect meal for a grey, rainy day such as today and, let me tell you, the leftovers are just as delicious. Just as a side note, our cube steaks have never cooked in the time listed, so be prepared to cook them longer, just in case. Now, about the InstantPot: this thing is AWESOME! I know it's a little pricey (you can get it through the link to Amazon below if you're wanting one right this second OR you can often get them through Kohl's for cheaper if you wait for discounts—with the Black Friday and Cyber Monday sales around the corner, you may even be able to find them at one of the store's sales), but it's totally worth it. I'll post other recipes where you use this later because it truly is amazing, but it's also great for things like this because A)it was one less thing on the stove, B)it was much quicker, and C)we didn't cut any potatoes and had varying sizes and every last one of them was tender: absolutely perfect! I'm dying to try a cheesecake in it because I'm told they're amazing (maybe a pumpkin cheesecake in time for Fall!). If you don't have an InstantPot, you can obviously just boil them like normal, but I promise one of the babies is totally worth it!
